Apple cake

Yesterday got off to a late start, or an early start, depending on how you look at it. At almost 2am while I was trying desperately to fall asleep before hunger took over, hubby announced that he felt for apple dumplings. Really. So we got up to make him apple dumplings. I couldn't find a recipe for one, but saw one for a lemon cake that seemed simple enough. And the picture looked good. So I tweaked it a bit, and then a lot and we made this apple cake instead


The good thing about the recipe we came up with was everything went into one bowl for mixing. No creaming butter and sugar and all of that.


8 oz butter
1 cup sugar
2 1/2 cups flour
2 tsp baking powder
 

Then the hard part of peeling, coring and chopping up 4 small apples went to hubby.


The apples were sprinkled with cinnamon and brown sugar and microwaved for for 2 minutes,

 

then folded into the mix. The batter on it's own could use less flour, but we had to increase it to account for the juice from the microwaved apples. 


Which also explains why it took almost 50 minutes to bake at 350F.


It was good while still warm, and even better the next day. Fortunately the batter was enough for two 9x9 pans.
